Happy Friday! I actually wondered how I would make it to Friday. I worked last Sunday, so this has seemed like an extra long week. I’m so ready for some time to relax and catch up on things! Some things on my to-do list this weekend are:
- do my long run
- get a haircut
- catch up with a couple of friends
- clean the guest room & master bedroom
- relax with the hubby
- go to the grocery store
This was a super quick dinner and it was super delicious. By this late in the week I’m ready for something that is simple to make but not lacking in the taste department. These tacos definitely fit that bill. Hubby and I both got home around 5:30 last night and decided to take Norah the poodle for a walk to get a little of her never-ending energy out. We walked around our neighborhood for a while (it was 84 degrees outside!) and were surprised to find that it was already 6:30 when we got home! I wanted to try and have dinner done by the time American Idol started at 7:00 so I pulled out some of the raw shrimp that we didn’t use from the pizzas the other night. Scanning the fridge gave inspiration for this conglomeration of tastes. Try them! You’ll like them. :)

Shrimp Tacos
1 teaspoon olive oil
1/3 lb. shrimp, peeled & deveined
1/2 a small head of purple cabbage, sliced thinly
1 jalapeno, deseeded and finely chopped
3 garlic cloves, minced
salt to taste
4 corn tortillas (fresh is best!)
light sour cream
shredded cheese
cilantro ranch sauce
Heat olive oil in over medium heat in non-stick skillet. When hot add in cabbage & jalapeno; sauté until it begins to get tender. Chop the shrimp into 1” pieces and add to cabbage mixture; sauté until shrimp is pink. Add garlic to shrimp & cabbage and sauté for additional 2 minutes. Season to taste with salt. To assemble, put a small amount of sour cream on a warm corn tortilla (I like to warm mine on a griddle with a little cooking spray), top with about 1/3 cup of the cabbage mixture, a sprinkle of cheese, and a small amount of the cilantro ranch sauce.
Cilantro Ranch Sauce
1/4 cup cilantro, finely chopped
juice of 1/2 a lime
2 tablespoons light ranch dressing
1/8 teaspoon cayenne pepper
Mix all together until well combine and serve with tacos.

Ohh, those shrimp tacos sound great!
The quesadilla was pretty good! Definitely different, but I liked it. :-)
