Sweet Potato Fries.


In college I pretty much survived on sweet potatoes. I think that at one point I heard that they were one of the most perfect foods nutritionally. I discovered several ways that I really enjoy them, but making them into fries is by far my favorite. Even though I've been out of college for almost five years, I still eat at least one sweet potato a week. Here's the general recipe that I use:

Sweet Potato Fries
  • 1 sweet potato
  • olive oil
  • seasoning - I usually use a Cajun seasoning because I like mine spicy
Preheat oven to 400*. Wash the sweet potato, scrubbing the skin well. Dry thoroughly.

Cut into chunky fries (you'll need a sharp knife!).

Put into a bowl and drizzle with about 1/2 a tablespoon of olive oil. Spread on greased cookie sheet and sprinkle with seasoning of choice.

Bake for 30-45 minutes, turning once halfway through. You'll know they're done when the fries are turning browning and starting to caramelize. I like mine a little more on the done side, so I leave them in for the longer time.
