
I made the best salad for dinner last night! I made our family’s standard dressing (crush a clove of garlic in the bottom of a wooden bowl, add some salt, pepper, & sugar and mash into garlic until it forms a paste. add in some vinegar & olive oil. Yum).
I then cut up the following into fine strips:
- green bell pepper
- sugar snap peas
- celery
- purple onion
- fresh spinach
- baby greens
I mixed in some angel hair cabbage and then topped the salad with toasted sunflower seeds, pumpkin seeds, & cranberries, some sauteed shiitake mushrooms, and grilled chicken. So good! The flavor combination was great, but I think all the ingredients being finely chopped also made a difference!
