We eat a fair share of cookies around our house. And brownies. Right after we got married I, trying to be the good wife, would make cookies and leave them out on the counter on our new cake stand. We would munch away a whole batch in just a couple of days! After several months of marriage, I tried a new tactic – freezing cookies. Guess what I found out? My hubs loves frozen cookies. And I’m not opposed to them either. They also break off into small pieces easier when they’re frozen, so I got in the habit of having a bit here and a bit there – those bits don’t have calories, right? Wrong. My newest solution – since I’m not really considering giving up making sweet treats – is to make cookie dough and keep it in the fridge or freezer. We are not super given to eating raw cookie dough, so that’s not a temptation. And we have to go to the trouble of actually baking a cookie if we want one. The result is that we have been eating less cookies – and enjoying them more because they’re fresh from the oven!
Here’s the latest recipe I tried (you may have to register to see this recipe – it’s fast and I don’t believe there are any strings attached). I was intrigued by it’s healthful ingredients, combined with a some of my favorite add ins. I didn’t have walnuts, so I used pecans instead. They almost taste like a breakfast cookie! I can only imagine how good they would be crumbled in oatmeal. Or with a little nut butter sandwiched in between two small cookie bites. We’ll see how fast this batch disappears!
